> Cassandra's Vegetarian Quiche

Relished at the 'Share-It-Around' Vege Swap Lunch - October, 2011

Ingredients

Base

1 cup wholemeal flour
1tsp butter
1/4 cup water

Filling

5 organic eggs
1/2 cup of finely chopped onions or spring onions
1/2 cup of flat leaf chopped parsley
1 cup of grated carrot
1 tsp butter
1-2 teaspoons of coriander
(optional) seasoning

Method

  1. Mix base with a wooden spoon into a soft dough
  2. Line oiled quiche with rolled pastry
  3. Blind bake with dried beans for 10 minutes in moderate oven
  4. Beat eggs
  5. Gently add and blend other filling ingredients
  6. Pour into base
  7. Cook for 25 minutes or until firm
