Wash raw spinach and chop across the leaves into strips approx 2 - 3 cm wide. Then try:

Variation 1: SPINACH AND MANGO SALAD
Spinach
Pulp of a fresh mango
Fried pine nuts
Finely chopped spanish (red) onion
Generous squeeze of lemon juice

Variation 2: SPINACH AND ORANGE SALAD
Spinach
Diced flesh of a fresh orange
Pine nuts or sunflower seeds
