> Lisa's Silverbeet & Almond Salad

Relished at the 'Share-It-Around' Vege Swap Lunch - October, 2011

Ingredients

2 cloves garlic
a handful of finely chopped almonds or other nuts
olive oil
spring onions or chives (optional)
10-15 leaves silverbeet or spinach, washed and chopped
cracked pepper & salt
juice & rind of 1 lemon

Method

  1. Crush and chop 2 cloves of garlic
  2. Chop nuts, add to pan with garlic and olive oil and sauté. You could also add spring onion or chives at this point. I added some fresh chives.
  3. Add about 10-15 leaves worth of washed, chopped silverbeet or English spinach minus the tough parts of the stalks and very briefly toss in the pan so it wilts slightly.
  4. Drizzle some more olive oil over the leaves to add flavour and tone down the bitterness of the leaves.
  5. Move the pan contents to salad bowl and add in cracked pepper and salt to taste.
  6. Grate the rind of a whole lemon and add to bowl with the juice of about half the lemon.
  7. Toss and serve.
