> Julietta's Beetroot Soup (Borscht)

Relished at the 'Share-It-Around' Vege Swap Lunch - October, 2011

Ingredients

2 cups grated beetroots (about 3 medium size or 2 large)
2 carrots, diced
2 small or 1 medium potato, small diced
1 onion, diced
bay leaf
water
1/4 cabbage, shredded
2 tbs lemon juice
1 tbs sugar
salt & pepper

Method

  1. Place carrots, potato and onion in large saucepan with bay leaf and approx 1 litre water. Bring to the boil, then simmer.
  2. Remove tops & bottoms from beetroots, peel and grate. (Vegetable peeler works well to remove rind.) Add beetroot to saucepan with other vegetables and ensure water is adequate to generously cover vegetables.
  3. Continue to simmer until carrot and potato are cooked.
  4. Stir in cabbage, lemon juice and sugar.
  5. Simmer for another 5-10 minutes or until cabbage is tender.
  6. May be served piping hot, or chilled. Remove bay leaf before serving.
