> Kylie's Apple Cake (+ vegan variant)

Relished at the 'Share-It-Around' Vege Swap Lunch - October, 2011

Ingredients

2 cups sugar
2 cups self-raising flour
4 eggs
4 tbsp custard powder
1 cup milk
125g margarine
3 granny smith apples, grated
Cinnamon

Method

  1. Place all ingredients except the apples and cinnamon in a bowl and beat together for 10 mins.
  2. Combine the grated apples and lots of cinnamon in a bowl.
  3. Line the bottom of a cake tray (32cm x 27cm) with baking paper and grease with a little margarine/olive oil.
  4. Pour half of the cake batter into the tray and spread evenly.
  5. Spread half of the apple mixture over the batter, then pour the remainder of the batter over the top, spreading evenly. Top with the remaining apple mixture.
  6. Bake at 170 C for approx 35-40 mins.

Vegan variant

For a vegan variant, replace the above ingredients with those below and follow the same method:

1 ½ cups sugar
2 cups self-raising flour
4 tbsp custard powder
1 cup soy milk
½ cup olive oil
3 granny smith apples, grated
Cinnamon

As vegan variant does not rise as high, try using a smaller cake tray to achieve a taller cake.

This vegan version might need a slightly longer cooking time, especially if using a smaller tray and filling it higher. Check to see if cooked through by piercing with a skewer - if it comes out clean it should be ready.
