Tips

Pork neck is mixture meat and a little fat and will resulting in soft meat.

You could Roast pork, Pork rasher or pork loin as well or mixture of a bit of each.

Best served with:
Nasi Putih/ Steamed Rice, Lontong / Ketupat /Rice cake.

SATE BABI JAKARTA
(PORK SATAY - JAKARTA STYLE)

Method category: Grill (Panggang/Bakar)

Ingredients/ Bahan:
1 kg Pork Neck, diced (bisa 1/2 lulur dalam + 1/2 samchan, potong dadu)

Spices/Bumbu:
3 cloves Garlic (Bawang putih)
2 tbsp Galangal powder (Lengkuas)
   Sweet Dark Soy Sauce (Kecap manis)
1 tsp Salt (Garam)
2 tsp White Pepper (Merica)
2 tsp Lime juice (air jeruk nipis)
2 pieces Candlenut (kemiri) 2 cloves Garlic (bawang putih)
1 tbsp Salty Soy Sauce (Kecap Asin)
2 tbsp Oil + 2 tbsp Sweet Dark Soy Sauce for dipping before grilling (minyak dan kecap manis untuk salutan sebelum dibakar)

Sauces/Saus:
1-2 Shallot, sliced thinly (bawang merah iris tipis)
1 cup Sweet Dark Soy Sauce (Kecap manis)
2 tsp Galangal powder (Laos bubuk)
2 Bird Eye Chillies, sliced finely (cabe rawit, iris)
 

 

Directions/Cara membuat:
English:
1.Blend all the spices except oil & Sweet dark soy sauce with the pork meat. Leave in the fridge for 2 hours. Then arrange the meat on a bamboo skewer (about 4-5 dices).
2. Mix some oil with sweet dark soy sauce, and lime juice and dip the meat on the skewer before putting it on to a grill or on a BBQ.
3. Serve with the sauce and steamed rice/rice cake.

Indonesian:

1. Haluskan semua bumbu (kecuali minyak dan kecap) dan campurkan bumbu ke potongan daging, lalu biarkan minimum 2 jam di dalam kulkas.
2. Tata daging dengan tusuk sate (sekitar 4-5 potong 1 tusuk).
3. Olesi semua sisi sate dengan campuran minyak dan kecap dan air jeruk nipis.
4. Bakar hingga matang. Sajikan dengan saus dan nasi putih/lontong/ketupat.
