Tips

The form of the mould or the colander used to form the Hunkwe mixture will influence the size of the result.

ES DAWET
(TWO COLOUR DESSERT)

Ingredients/ Bahan:
1 can of Coconut milk (santan cair)
2 pack of Hunkwe flour (tepung hunkwe)
1 block of Palm Sugar (Gula merah)
1/2 tsp Salt (Garam)
   Water (air)
1 bowl of Ice water with ice cubes (air es dan es batu)
1 big flat Colander/special Dawet's mould, or you could use a base of basket with square or round hole. (Cetakan/saringan dawet)
1 tsp Green Food colouring (pewarna makanan hijau)
1 tsp Red Food colouring (pewarna makanan merah)


Directions/Cara membuat:

1. Dilute the palm sugar with water, and boil until it become syrupy.Set aside to cool.
2. Heat the coconut milk and salt until boiled. Set aside to cool.
3. Mix the Hunkwe flour with 3 cup of water. Add 1tsp of green food colouring. Cook until boiled and become thickened.
4. Spoon the hunkwe mixture onto the mould which placed on top of a bowl of icewater and ice cubes. And crushed until the mixture until it appears in the bottom of the mould and formed like worms. Repeat until the mixture finished.
5. Repeat the other pack of hunkwe only the use the red food colouring this time.
6. To serve. Spoond a tablespoon of each Dawet(hunkwe worm)into a glass. Add a tablespoon of palm sugar syrup. And top with some coconut milk and ice cube. Mix together.

Indonesian:

1. Larutkan gula merah ke dalam air, rebus hingga kental atau seperti syrup. Sisihkan dan dinginkan.
2. Panaskan santan cair, tambahkan garam. Rebus hingga mendidih. Sisihkan dan dinginkan.
3. Larukan tepung hunkwe kedalam 3 gelas air, tambahkan zat perwarna hijau. Rebus hingga mendidih dan kental. Ambil 2 sendok larutan hunkwe lalu saring dengan cetakan dawet yang diletakkan diatas mangkok berisi air es dan es batu. Tekan2 dengan sendok hingga keluar dibawah cetakan berbentuk seperti cacing2.
4. Lakukan hal sama dengan 1 pack hunkwe satunya hanya kali ini dengan zat pewarna merah.
5. Untuk menyajikan, taruh 1 sdm warna merah dan hijau kedalam gelas. Lalu tambahkan 1 sdm gula merah sirup tadi. Kemudian tuangkan santan dan tambahkan es batu. Aduk rata sebelum diminum.
