Balinese Fish Curry

Ingredients/ Bahan:
500 gr Bass Fillet
1/4 Lemon
1 pinch Salt (garam)
1 tbsp Tapioca flour (tepung kanji)
Some chopped Coriander leaves/Parsley for garnish (daun Ketumbar/ Parsley untuk taburan)

Sauce/ Saus:
1tsp Shrimp paste (terasi udang)
2 Red/White Onion (Bawang merah/bawang Bombay putih)
2.5 cm Ginger, peeled & sliced (Jahe, kupas dan iris)
1 tsp Galangal powder (bubuk Lengkuas)
2 Bird Eye chillies (cabe rawit)
2 Garlic (bawang putih)
6 tbsp Oil
1 tbsp Sweet Soy Sauce (Kecap manis)
1 tsp Tamarind, soaked in 2 tsp warm water (asam direndam dalam air hangat)
250 ml Water (air)

Directions/Cara membuat:
English:
1. Grind the sauce ingredients  except the oil, tamarind water and soy sauce to a paste in a food processor or with a mortar and a pestle.
2. Heat 2 tbsp of oil in a pan and fry the spices, stirring for about 2 minutes. Add the soy sauce and the tamarind liquid with the water. Cook for 2-3 minutes, keep stirring.
3. Wash the bass fillet, cut into bite sizes. Squeeze the lemon and pour the water onto the fish. Sprinkle with salt and mix evenly. Sprinkle with tapioca flour evenly. Fry the fish for 2-3 minutes. Turn once only so that the pieces stay whole. Lift out with a slotted spoon and put into the sauce.
4. Cook the fish in the sauce for 3 minutes, until cooked through. Garnish with coriander leaves or parsley and serve with white rice.
(Sauce could be made one day in advance)
Indonesian:
1. Haluskan bahan2 saus kecuali kecap, minyak dan air asam hingga menjadi paste. Lalu goreng dengan minyak sekitar 2 menit, lalu tambahkan kecap dan air asam. Masak sekitar 2-3 menit. Sisihkan.
2. Cuci ikan, potong2 seukuran 2x2cm. Beri air perasan lemon, garam dan tepung tapioca. Goreng sekitar 2-3 menit setiap sisinya. Angkat, tiriskan.
3. Masukkan ke dalam sauce, aduk2 dan masak sekitar 3 menit hingga rata dan masak. Taburkan daun ketumbar atau parsley. Hidangkan dengan nasi putih.
