Babi Guling BALI

Ingredients/ Bahan:
1.5 kg Pork Shoulder Roast boneless (Daging babi panggang tanpa tulang)
2 m Butcher string (tali ikat daging)

Spices/Bumbu:
5  Bird eye chillies (Cabe rawit merah)
1 tsp Dried shrimp paste (Terasi)
1 tbsp Coriander powder (Ketumbar bubuk)
1 tbsp Salt (Garam)
3 cloves Garlics (Bawang putih)
1 tbsp Galangal powder (Laos bubuk)
5  Shallots (Bawang merah)
1.5 cm Ginger (Jahe)
1 tbsp Oil (Minyak)
3 tbsp Lemon grass (Sere)
1/2 tbsp Black Peppercorn (merica hitam kasar)
3 Kaffir lime leaves (daun jeruk purut)
1 tbsp Turmeric powder (Kunir bubuk)
7.5 pieces Candlenut (Kemiri)
1 Bay leaf (daun salam)
2 tbsp Turmeric water (1 tsp + 25 cc water)

Directions/Cara membuat:

English:
1. Blend all the spices using food processor or pestle.
2. Open the pork roast, make some incision inside the meat. Fill in with blended spices as stuffing. Roll up the meat again and tie up with butcher string.
3. Set the oven for 220 degrees, or if you have BBQ with rotisserie you could use it like it should be done in Bali. Bake about 1 1/2 hours.
4. Stand for rest for about 10 minutes before cutting it. Separate the crackling first then the stuffing put it in the middle of a serving dish. Slice the meat and arrange on to the stuffing. then arrange the crackling on top. Serve with Yellow Rice/Steamed Rice and Urap-urapan.
 
Indonesian:
1. Haluskan semua bumbu.
2. Buka daging, lalu buat irisan supaya bumbu dapat disisipkan untuk isi. Gulung daging kembali menggunakan tali daging.
3. Panggang dalam oven sepanas 220 derajat selama 1 1/2 jam atau diatas bara menggunakan rotisserie yang dapat diputar.
4. Biarkan selama 10 menit setelah matang baru dipotong. Pertama pisahkan kulit, lalu keluarkan isi. Letakkan isi diletakan di tengah piring saji, tumpuk dengan irisan daging, lalu letakan irisan kulit di atasnya. Hidangkan dengan nasi putih/kuning dan Urap-urapan.
