Corn Pasta on Mushroom-Tomato Sauce (MV Lunch)

Here is another one of my Microwave lunches:
At home, pre-cook one to two cups of corn pasta. (I
discovered it in my local HFS). Note, that corn pasta
needs to cook longer and with more water than regular
pasta. Put pasta into lunch container.
Add: 1-2 cups of chopped Roma tomatoes and spices,
especially salt and pepper, oregano, parsley,
and chives or green onions. (You can use canned
tomatoes instead of fresh ones).
Add: as many chopped mushrooms as you want. I usually
do 6-12, depending on my mood for the day.

Cabbage on Tomato Sauce
-----------------------
1/2 cabbage, cleaned and chopped coarsly
3-5 roma tomaoes
about 1 cup of fat-free vegetarian tomato/basil
spaghetti sauce.
Put cabbage, tomatoes, and sauce into plastic
lunch container. DO NOT MIX!
Mix and nuke for 7 minutes for slightly crunchy
cabbage, 9 minutes or more for soft cabbage.

Date: Tue, 07 Feb 95 13:40:06 PST From: vmh@intellicorp.com Eggplant and Tomatoes over Rice Noodles ======================================= 1 Eggplant (cubed to 1/4 - 1/2 inch cubes) 1 can Tomatoes (either use whole and chop, of buy chopped) 1/2 package of rice noodles (glass noodles) - precooked Salt (optional) In microwave container, layer eggplant, salt, tomatoes, and rice noodles in that order. Microwave high until eggplant is to taste - it takes me 10 minutes on high. Mix everything and enjoy. Variation: Use sticky rice instead of the noodles. kwvegan vegan

This is a bit strange, but I liked it:
Potato/Cabbage Box
------------------
1/2 cabbage chopped coarsly
2 small potatoes
1 dozen or more mushrooms
2 T minced chives
salt
black pepper
paprika
Layer into lunch box in this order. Do not mix.
Mix at work and nuke for 10 minutes on high.
Option: I would think this would be good with
some caraway seed or Oregano added. I
could also imagine using 2 teaspoons of
sweet curry instead of the pepper and paprika.

Rice and Beans for lunch
In the morning (or the night before), combine in a
plastice container:
1 cup (before cooking) of brown rice (basmati) cooked in vegatable broth
instead of water.
1/2 can spiced italian tomatoes
1/2 bunch parsley
1/2 can small brown beans (seasoned version)
6-12 fresh or canned oyster mushrooms
Mix. Nuke for 3 minutes at high for lunch. Yummee!

This seemed to simple, but I like it so much (as I am
munching along):
6 oz of corn spaghetti (wheat free, I get them from the HFS). Cook.
2-4 Tbs. minced Parsley
2-3 Tbs minced fresh Chives
1 pkg of frozen leaf spinach
salt (spinach generally requires you to use a bit more salt. I used
quite a bit.)
Pile into plastic lunch container. Nuke for 5 minutes. Mix.
Nuke again for a minute or two, if spinach is not cooked enough.

Quarter the Cherry Tomatoes and put on top. Add Parsley and Chives and Salt to Taste. Do not mix! Here is one that I made just a couple of days ago and really liked: Note that measures are approximate. I have a lunch plastic container, and I simply fill it all the way. LUNCH PACK ---------- 1-2 cups of cooked rice, half of it wild rice, half of it basmati 1 can of slided water chestnuts 1 salad tomato, chopped Put into plastice container. Then add: sliced fresh mushrooms as necessary to fill the container almost to the rim. Then dump on top (DO NOT MIX. If you mix it, the rice will be too soggy come lunch time. Mix before nuking): 1/2 can of Hunts tomato sauce black pepper to taste oregano to taste At work, when hunger hits, nuke for 3-5 minutes, depending on the microwave you are using. I like stuff cooked right, so I use 5 minutes to get the tomatoes nice and done. kwvegan vegan

Wild Rice and Sweet Potatoes

1 cup of cooked Wild Rice
1 cup of cooked Basmati Rice
I cook them together in the rice cooker with equal amounts
of water.
1-2 uncooked sweet potatoes, cut into 1/2 inch pieces.
1-2 T fresh chopped parsley
Salt to taste. (I put quite a bit for this dish.)
Fill into plastic lunch box. Mix for cooking. Nuke for 10 minutes
on high.
Note: This can also be made using a pre-cooked sweet potato. Then
the nuke time is reduced to 3 minutes for reheating.
Variation: I think this would be good with a couple of table spoons
of orange juice for extra flavoring added before cooking.

Top of with corn. There should be more zucchini than corn. Generously sprinkle with curry powder. Add some salt, if you like. Before cooking, mix thoroughly.
