Dragonfruit and Passionfruit butter cake 

Ingredients

  500-600g Dragonfruit flesh

bullet

100 g butter at room temperature

bullet

1 teaspoon vanilla essence

bullet

1 cup castor sugar

bullet

3 eggs

bullet

1 cup plain flour

bullet

1/2 cup self raising flour

bullet

1/4 cup bicarbonate soda

bullet

passionfruit pulp to decorate

Cream Cheese icing

bullet

125g cream cheese, softened

bullet

25g butter, at room temperature

bullet

1 ½ cups icing sugar mixture

 

  1. Grease a deep 20 cm-round cake pan; line base and side with baking paper.

  2. Food process or mash Dragonfruit flesh, drain the Dragonfruit juice off.

  3.  Beat butter, extract, sugar, eggs, flours and soda in a medium bowl with an electric mixer, on a low speed, for about 30 seconds or until ingredients are just combined, increase speed to medium; beat mixture for 4 minutes, Stir in Dragonfruit.  Spread mixture into cake pan.

  4. Cook in a moderately slow oven, 160oC, for about 1 ¼ hours, or until cooked when tested.  Stand cake in pan for 5 minutes, turn onto a wire rack to cool.

  5. CREAM CHEESE ICING. Beat all ingredients in a small bowl with an electric mixer until smooth.

  6. Spread icing over top of cake serve drizzled with passionfruit pulp.  

 

Dragonfruit and Passionfruit Sorbet

A great refreshing sorbet recipe using dragonfruit and passionfruit.

 Ingredients

bullet6 ripe Dragonfruits
bullet4 passion fruit
bullet1/2 lemons, zest of, and juice of
bullet3 ounces sugar
bullet1 cup water

6 servings | 30 minutes 10 mins prep

1. Boil the water and sugar for about 10 minutes.

2. Meanwhile, puree the peeled dragon and lemon juice.

3. Add to the syrup with the lemon zest and mix well.

4. Freeze until slushy.

5. Turn the mixture into a bowl and add the scooped out flesh of the passionfruit.

6. Whisk till smooth and freeze again till firm- allow to soften in the fridge a little before serving.

 

Red Dragonfruit Cheesecake

Ingredients:

1 cup fresh pulped red dragonfruit

bullet

1 (8 oz) pkg cream cheese, softened

bullet

1 cup sour cream

bullet

1 egg

bullet

1 package vanilla pudding mix

bullet

1 cup sugar

bullet

1 premade  crust pie shell

Directions:

Mix up the filling ingredients, dump the filling in the shell, bake until done (350F oven). Chill until firm. Serve with cut up Dragonfruit as a garnish on top.
